Microorganisms replace breeding animals

What should we do if we want to continue to use a valuable animal protein as a component of our food, but no longer want to keep the animal to obtain this protein?
The solution: we use microorganisms to produce an imitation that has an identical molecular structure and the desired functionalities or nutritional values.
Yarrowia lipolytica is a yeast species that can synthesize a wide range of valuable metabolites. In the BRAIN Group, we use this yeast, which is approved for the food sector, to produce nature-identical proteins.
